PB& Jam Bars

These PB&J Bars are a delightful twist on the classic sandwich, perfect for a snack or dessert!

Ingredients:

  • 1 cup peanut butter (any variety)

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 3/4 cup jam (any flavor)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.

  2. Prepare the Peanut Butter Dough

    • In a large mixing bowl, beat the peanut butter, softened butter, granulated sugar, and brown sugar together until creamy and well combined.

    • Add the eggs, one at a time, beating well after each addition.

    • Mix in the vanilla extract.

    • In a separate bowl, whisk together the flour, salt, and baking powder.

    • Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.

  3. Assemble the Bars

    • Press half of the peanut butter dough into the prepared baking pan, spreading it evenly to cover the bottom.

    • Spread the jam evenly over the dough layer.

    • Drop small spoonfuls of the remaining peanut butter dough over the jam layer. Gently spread and press the dough to cover the jam as much as possible. It’s okay if some jam peeks through.

  4. Bake

    • Bake in the preheated oven for 25-30 minutes, or until the top is golden and the edges are set. A toothpick inserted into the center should come out with a few moist crumbs.

    • Remove from the oven and allow the bars to cool completely in the pan.


Once cooled, cut into squares or bars and enjoy your delicious creation!
